~ From my Garden Kitchen
Summer Seafood Salad 4 cloves garlic
2 pounds boiled shrimp
4 fresh tomatoes
2 cups Italian Olive Mix
(found at most specialty markets and grocers)
l cup fresh Parmesan cheese, grated
1 pound lump crabmeat
l large lemon, juiced and the zest
2 or 3 types of lettuce --
Iceberg, Romaine, Boston, Radicchio
1 or 2 Avocados - optional, but delicious
Salt and Pepper
In a large wooden salad bowl, crush garlic. Add shrimp, tomatoes and olive mix. Toss with cheese - save a little for garnishing. Add crabmeat gently, trying not to break, lemon juice and zest. Chill! When ready to serve, break up lettuce and toss gently with salad mix. Top with extra cheese. Serve with warm toasted saltines.*This delicious recipe is from 'Cooking and Gardening with Dianne',
