Red Snapper with Shrimp Stuffing


Select a fish weighing 3 to 4 pounds. Wash well, rub salt inside and out, and stuff with Shrimp Stuffing (below). Fasten together with skewers, or lace with string to hold in place.

Brush fish with a little butter or olive oil and place in greased pan. Bake at 350 for about 40 minutes, or until fish flakes easily when tested with fork.

Shrimp Stuffing

1/4 cup chopped celery
2 tablespoons chopped onion
2 tablespoons butter or margarine
3 slices cooked bacon, minced
1 cup soft breadcrumbs
1/2 cup chopped shrimp
1 egg
Salt and pepper

Saute' celery and onion in butter until soft. Add remaining ingredients and mix well. Yield: stuffing for a 3 - 4 pound fish.
