Pepper Steak with Brocccoli 2 lbs sirloin
4 tablespoons vegetable oil
Dash of black pepper
1/2 cup chopped onion
1 clove minced garlic
1/2 cup chopped celery
2 bell peppers
2 - 3 stalks fresh broccoli
3 beef boullion cubes,
dissolved in 2 cups hot water
3 tablespoons cornstarch
2 tablespoons soy sauce
Slice beef into strips 1/4-inch thick. While preparing vegetables, marinate the beef strips in --
1 tablespoon cooking sherryMeanwhile, cut peppers and broccoli into 1-inch pieces and set aside. Heat oil and cook beef over high heat until browned. Sprinkle with a dash of black pepper while cooking. Add onion, garlic and celery, and stir while still cooking. Add boullion to mixture. Simmer covered over low heat until meat is tender. Add peppers and broccoli and cook about 20 minutes longer. (Try to keep vegetables slightly crisp ... do not over-cook.) Blend corn starch and soy sauce with 1/4 cup water. (I shake it up in a small jar) Add to mixture and cook until thickened, stirring constantly. Serve over rice or egg noodles.
