Southern-Style Okra and Tomatoes 1 1/2 pounds fresh young okra
4 - 5 slices bacon
1 medium onion, chopped
1 teaspoon salt
3 - 4 medium ripe tomatoes,
peeled and chopped
Creole seasoning to taste
Wash okra, pat dry, and slice into 1-inch pieces. In a large skillet, fry bacon until crisp. Remove bacon, drain, and set aside. Add okra, onion, and salt to bacon drippings. Cook for 10 minutes over medium-high heat. Add tomatoes and creole seasoning and stir well. Reduce heat and simmer for about 45 minutes, stirring often. Serve topped with crumbled bacon.
