Fresh Summer Peas

1 quart fresh shelled purple-hull,
      crowder, or lady peas
1 whole onion
Salt and pepper to taste
1 teaspoon sugar
3 - 4 slices bacon, salt pork, or smoked ham


Clean and rinse peas thoroughly. In a large saucepan, combine all ingredients and add enough water to just cover. Bring to a boil, reduce heat and simmer for about 2 hours. You may let this sit, covered, until serving time.
