Fried Green Tomatoes 4 large firm green tomatoes
1/4 cup flour
1/2 cup cornmeal
Salt and pepper to taste
Creole seasoning (optional)
Vegetable oil
Cut tomatoes in 1/4 - 1/2 inch slices. Mix flour and cornmeal with seasonings. Coat tomatoes with the mixture and place in heavy skillet containing about 1 inch of hot vegetable oil. Fry slowly until brown, turning once. Drain on paper towels and serve immediately.This same method can be used for frying sliced sqaush, zucchini, eggplant, and okra. Slice the okra into 1/2 inch rounds, and sprinkle with a little water or milk before coating.
