Easy Chicken Tetrazzini

1 medium-sized fryer
l chopped onion
1 chopped bell pepper
l cup chopped celery
1/2 stick margarine
12-oz. package spaghetti
1 can mushroom soup
1 can drained mushrooms
1 cup grated sharp cheddar
Small jar pimento (opional)
Seasonings to taste


Cook fryer in 2 quarts water till tender. Use good seasonings in the water to make a good, rich broth. Remove from broth and debone, saving broth. Saute' onion, pepper, and celery in butter. Add sauteed vegetables to the broth and bring to boil. Add spaghetti and cook until tender. Add mushroom soup, mushrooms, cheese, deboned chicken, and seasonings. Simmer slowly until cheese melts. The small jar of pimento can be added for color.
