Chicken Cacciatore 1 medium sized fryer, cut up
1/2 cup flour
1/4 cup olive oil
1 8-oz can tomato sauce
2 cloves garlic, minced
1 medium onion, sliced
1 can stewed tomatoes, chopped
1 can sliced mushrooms, drained
2 bay leaves
1/2 teaspoon pepper
1 teaspoon oregano
3/4 teaspoon salt
Coat the chicken in flour and brown in olive oil in skillet; remove and set aside. Add onions and garlic and saute' until tender. Add remaining ingredients and blend well. Add chicken to skillet; spooning sauce over chicken pieces. Simmer, covered, for 30 - 45 minutes, or until chicken is tender and sauce is thick, turning occasionally. Delicious over noodles, rice, or mashed potatoes.
