Recipes for Fall

Succotash

1 tablespoon cooking oil
l onion, chopped
l cup fresh or frozen baby lima beans
2 cups fresh or frozen corn kernels
1 cup chicken broth
1 teaspoon fresh parsley
Salt and pepper to taste

Heat oil in saucepan over moderate heat and saute onion until softened. Stir in the lima beans, corn and chicken broth. Add seasonings to taste. Bring to a boil, and then reduce heat. Cover and simmer until vegetables are tender. Remove from heat and add parsley.
